I wanted to come up with a Christmas nuts recipe that would remind me of the ones I used to get from the mall during the holiday season growing up. The cinnamon and sugar aroma got me every time! So here is my Paleo version for you to enjoy. I tried many different ways of doing these nuts. I tried them on the stove top and in the oven as well and neither of those worked quite as well as in the good ol’ slow cooker. These nuts would also be a great gift to give to friends and neighbors so don’t be afraid to double, triple, or quadruple the recipe. Merry Christmas everyone 🙂
1 cup almonds
1 cup pecans
1 heaping teaspoon cinnamon
1/4 cup coconut sugar
3 Tablespoons water
1. Turn on slow cooker to HIGH.
2. Add almonds, pecans, and water to slow cooker.
3. Pour coconut sugar and cinnamon in the same measuring cup ( I use a Pyrex 1 cup). Stir nuts and water while pouring 1/4 of the cinnamon-coconut sugar mixture into the nuts. Stir nuts every 15 minutes each time pouring 1/4 cinnamon-coconut sugar mixture into nuts. You will do this 3 times after the initial time as the nuts will be finished in 1 hour. Stir thoroughly on the last stir scraping the sides ensuring an even coating.
4. Scoop nuts into bowl or glass jar to cool. Let cool completely as they taste better and better as time and days go by. Store in airtight container.
