- 1 Celeriac
- Leeks, chopped
- Sea salt (optional)
- Black pepper (optional – omit for strict AIP)
- Cup up the celeriac into wedge pieces. Either put them in a steamer on the stove top or in a pot of water to boil. Once celeriac is soft, transfer into drained pot if steaming and mash. If boiling simply drain water out and mash. At this point as far as the seasonings go, add as much or as little of each of the rest of the ingredients. After adding everything I put the lid on the pot and turn the heat back on for just a few minutes in order to let the leeks soften up a bit. That is all. Simple and delicious!
